Most flavored coffees start with commodity-grade beans and rely on flavoring to mask what's underneath. Ours starts differently. Our Mocha is built on a foundation of specialty grade single origin coffee — beans that score 80+ on the SCA scale, sourced from carefully selected lots where altitude, climate, and soil converge to produce something genuinely exceptional before flavoring ever enters the picture.
Why does the base bean matter in a flavored coffee? Because flavoring amplifies what's already there. A low-quality base produces a flat, one-dimensional cup where the flavoring sits on top rather than integrating. A specialty grade base produces a cup where the chocolate flavoring and the coffee's natural character work together — creating depth, complexity, and a richness that a commodity bean simply cannot deliver.
Single origin means full traceability. You know exactly where your cup comes from, and so do we. We choose it that way on purpose.
The Craft
Every bag of Mocha starts in our small-batch roaster, where precision is non-negotiable. We roast in limited quantities — never scaled beyond what we can control — to a smooth medium roast that preserves the bean's natural sweetness while developing the gentle caramelization that gives this coffee its signature body and makes it the ideal canvas for a chocolate profile.
Immediately after the roast, while the beans are still warm and their surface pores are fully open, we apply high-quality, all-natural chocolate flavoring oils directly to the bean. This isn't a coating — it's absorption. The warmth draws the flavor deep into the bean's structure, creating an integration that is aromatic, layered, and consistent from the first brew to the last scoop in the bag.
The result is a rich chocolate decadence that feels like it belongs in the cup — because it does.
