The Source

Chiapas is Mexico's most celebrated coffee-growing state — and for good reason. Tucked in the southernmost corner of the country, bordering Guatemala, the highlands of Chiapas rise to elevations between 1,400 and 1,900 meters above sea level, where cool temperatures, consistent rainfall, and rich soils create ideal conditions for growing coffee with genuine complexity and character.

At this altitude, coffee cherries ripen slowly and evenly, concentrating natural sugars and building the layered flavor profile that makes Chiapas coffee so distinctive: bright enough to be interesting, smooth enough to be approachable, and sweet enough to need nothing added.

The varietal selection here is a carefully balanced trio: Typica, Catimor, and Bourbon.

Typica is one of the oldest and most foundational Arabica varieties in the world — the genetic ancestor of many modern cultivars. It contributes a clean, elegant cup with a naturally smooth body and refined sweetness. Bourbon, another historic and highly respected variety, adds complexity, natural sweetness, and a depth of flavor that elevates the overall profile. Catimor, a productive and resilient hybrid, provides structure and consistency, ensuring the blend performs reliably cup after cup.

After harvest, the cherries undergo a washed process — the pulp is removed, the beans are fermented and thoroughly washed, then dried. This process produces a clean, transparent cup where the origin's natural character — the lemon brightness, the brown sugar sweetness, the creamy body — comes through without interference.

The Craft

A washed Chiapas coffee at this altitude is already exceptional raw material. Our job is to honor it. We roast our Mexico pods small-batch, with full control over every variable from start to finish — no shortcuts, no compromises.

Our roast profile is developed specifically to preserve the medium acidity that gives this coffee its lemon brightness, while fully developing the creamy body and brown sugar sweetness that make it so satisfying. We roast to the precise point where all three tasting notes are in balance — bright, sweet, and smooth simultaneously — without tipping into roast bitterness that would flatten the origin's natural character.

Each pod is filled and sealed immediately after roasting. The result is a cup that delivers the full expression of a high-altitude Chiapas single origin — in seconds, without compromise.
