The Source

The Italian Roast is built on a deliberate and time-tested combination: specialty grade Arabica and Robusta. These are not interchangeable — each variety brings something the other cannot.

Arabica is the world's most widely respected coffee species, prized for its natural sweetness, aromatic complexity, and smooth character. At specialty grade, Arabica beans score 80+ on the SCA scale — meaning they begin as genuinely exceptional raw material before the roast ever begins.

Robusta is the other half of this equation — and in the right hands, it's a powerful tool. Robusta contains roughly twice the caffeine of Arabica and produces a significantly thicker, more persistent crema when brewed as espresso. It adds body, intensity, and a deep, earthy backbone that Arabica alone cannot replicate at this roast level. Together, the two varieties create a blend that is greater than the sum of its parts: the sweetness and complexity of specialty Arabica, amplified by the strength and structure of Robusta.

This is the blend that Italian espresso tradition was built on — and we've applied it to our darkest roast for a reason.

The Craft

The Italian Roast is our darkest roast — and getting there correctly is not a matter of simply applying more heat. It requires patience. That's why we slow roast this blend, allowing the heat to develop gradually and evenly through the bean rather than scorching the surface while the interior lags behind.

Slow roasting at this depth allows the natural sugars to fully caramelize, the oils to migrate evenly to the surface, and the Arabica/Robusta blend to integrate into a cohesive, balanced profile rather than a harsh, one-dimensional dark roast. The result is a coffee that is intensely dark without being burnt — bold without being bitter beyond balance.

Every batch is roasted small-batch, so we maintain full control over the roast curve from start to finish. No shortcuts. No compromises. Just the darkest, most carefully developed roast we make.

  • Caffeine: Higher than a standard Arabica-only roast due to the Robusta component
  • Acidity: Very low — the dark roast level and Robusta content both work to minimize acidity for a smooth, round finish despite the intensity
  • Finish: Long, dark, and warming — bold and persistent
