Not every coffee can survive a French roast and still have something worth saying. Ours can — because we start with the best raw material available: our highest-scoring African coffees.
Africa is the birthplace of coffee, and its beans carry a genetic complexity that no other growing region can match. African coffees are prized by roasters worldwide precisely because their dense structure, natural sweetness, and inherent depth allow them to be taken to extreme roast levels without collapsing into flat, ashy bitterness. The bean has to be exceptional before it ever touches the drum — and ours are.
We select only the top-scoring lots from our African sourcing for this roast. Lower-scoring beans simply cannot hold up to the heat. This is a blend built on merit, not convenience.
The Craft
French Roast is one of the most technically demanding roasts to execute well. Push too fast and you get scorched, acrid bitterness. Pull too early and the roast character is incomplete. The window is narrow, and hitting it consistently requires both precision and experience.
We roast our French Roast small-batch, which means every drum load receives the full attention it demands. Our roast profile is developed specifically for the density and moisture content of our African lots — taking the beans deep into second crack, where the natural sugars fully caramelize and the oils migrate to the surface, producing that characteristic glossy, oil-sheened bean that signals a true French roast done right.
The result is a bold, rich coffee flavor with a bittersweet character and low acidity — exactly what a French roast should deliver, and nothing it shouldn't.
