The Source
Mexico's coffee story is written across two very different landscapes — and this single origin brings both together in one bag. The beans are grown by coffee growers from Chiapas and Oaxaca, two of Mexico's most respected and historically significant coffee-producing states, each contributing its own character to the final cup.
Chiapas, bordering Guatemala in Mexico's south, is the country's largest coffee-producing state — known for its mountainous terrain, rich biodiversity, and coffees with depth and body. Oaxaca, to the northwest, is celebrated for producing coffees with a distinctive brightness and complexity, shaped by its unique microclimates and indigenous farming traditions that stretch back centuries.
The beans are grown at 900 to 1,000 meters above sea level in clay mineral soil — dense, nutrient-rich, and moisture-retentive, providing the plant with a steady mineral foundation that contributes to the cup's warmth and body.
The varietal selection here is one of the most historically rich in our entire lineup: Typica, Criollo, Bourbon, Mundo Novo, and Caturra.
Typica is one of the oldest Arabica varieties in the world — the foundational cultivar from which most modern varieties descend — contributing a clean, elegant cup with refined sweetness. Criollo is a particularly rare and historically significant variety in Mexico, descended from some of the earliest coffee plants brought to the Americas, known for its delicate character and low-yielding but high-quality production. Bourbon, one of the most celebrated Arabica varieties globally, adds natural sweetness and complexity. Mundo Novo, a natural hybrid of Typica and Bourbon, contributes body and consistency. Caturra, a compact Bourbon mutation, brings brightness and a clean, lively finish.
After harvest, the cherries are fully washed and sun dried — a process that produces a clean, transparent cup where the chocolate depth, cinnamon warmth, and green apple brightness can each express themselves clearly.

We roast to a medium profile — the precise point where the chocolate depth develops fully, the cinnamon warmth comes forward, and the green apple brightness lifts the finish without sharpening into acidity. The fully washed process and sun drying already contribute a clean, well-defined cup; our roast profile is designed to amplify that clarity, not compete with it.
