Brazil is the world's largest coffee producer — but not all Brazilian coffee is created equal. Santos is Brazil's most celebrated export grade, named after the port city through which the country's finest lots have shipped for over a century. The beans in this bag come from three of Brazil's most respected growing estates: Fazenda Santa Barbara, São Francisco, and Santo Antônio — farms with the kind of history, scale, and quality control that produce consistently exceptional coffee year after year.
The beans are grown across the Paraná and São Paulo regions at 750 to 1,050 meters above sea level in volcanic loam soil — rich in minerals, naturally fertile, and ideal for producing the smooth, low-acidity profile that Brazilian coffee is celebrated for worldwide. The lower altitude compared to high-grown Central American or African origins is intentional — it produces a denser, more chocolatey bean with a naturally full body and the kind of sweetness that needs nothing added.
The varietal selection is a classic and complementary pair: Catuai and Mundo Novo.
Catuai, a hybrid of Mundo Novo and Caturra, is one of Brazil's most widely planted and beloved varieties — productive, consistent, and known for producing a clean, balanced cup with good body and natural sweetness. Mundo Novo, a natural hybrid of Typica and Bourbon, is one of Brazil's most important cultivars — prized for its full body, low acidity, and the deep cocoa character that defines the Santos profile.
After harvest, the cherries undergo a pulped natural process — the outer skin is removed, but the honey-like mucilage is left on the bean during drying. This is then followed by sun drying, allowing the residual sugars to absorb into the bean and contribute a natural sweetness and body that a fully washed process cannot replicate. The result is an elegant, smooth cup with cocoa depth and a clean, refined finish.

We roast to a medium profile — the precise point where the cocoa notes fully develop, the natural sweetness from the pulped natural process comes forward, and the body reaches its full, smooth expression. The volcanic loam soil and sun drying already contribute a natural richness; our roast profile is designed to amplify that richness without tipping into roast bitterness.
